What is the solution for sensor velocity?

A broadband velocity sensor like the STS-2 with a bandpass gain of 1500 V/(m/s) will clip at +/-13 mm/s if attached to a digitiser with max input +/- 20V.
If you are looking at traces in row counts, then what matters is the maximum possible digitiser output ~ 2^(N-1) where N is the number of bits of the ADC.
For automatic processing I would personally set the clip threshold at ~ 80% of the the maximum possible digitiser output.
